Ryan, Apparently MSG is different than naturally occuring glutamate because MSG makes me have instant diarrhea, and I don’t suffer with it otherwise nor have to watch out for natural sources. So, I’m from Louisiana and have always been hesitant to try Cincinnati chili. It appears I am in the minority as I found it kind of disgusting. After reading the ingredients in the recipe on this site, I’m surprised that it doesn’t share more spices used in garam masala. I’m definitely saving this recipe. Others have commented that they prefer it with 2-3 Tbsp, so it’s all a personal preference. Well, a couple weeks ago I came across a frozen box of Skyline chili spaghetti and figured I might as well give it a shot. But there’s definitely cinnamon in Skyline chili. Even though I always request them to hold the mustard, a true coney starts off with one of their small hot dogs and buns, with essentially two lines of mustard, one on each side of the hot dog.
